Antonio Мoci is the New Head Chef at Borsalino Restaurant

The Italian restaurant Borsalino is proud to present its new chef, Antonio Voci. From June 5, guests will be able to enjoy our new menu created under his guidance.
Antonio Voci has come to St. Petersburg from the Piedmont region of Italy. Along with his culinary mastery, Antonio brings a part of sunny Italy to St. Petersburg — Borsalino’s new menu features traditional dishes from Piedmont as well as classic favourites of Italian cuisine.

The culinary specifics of Italy’s regions depend on their location. Natives of Piedmont are blessed with the generous bounty of the seas and mountains — fish and seafood, aromatic herbs, and goat’s cheese and cream, as well as mushrooms and the extremely rare white truffles that can be found here. Gourmands from all over the world have the opportunity to savour this seasonal delicacy from September to December.
Antonio has included a whole host of traditional dishes from his native Piedmont in Borsalino’s new menu, and recommends that guests try:

Ricotta Cheese Souffle on Asparagus Cream
Fish Soup with Canellini Beans and Prawns
Aubergines Gnocchi with Lamb Ragout
Tagliatelle with Rabbit and Vegetables

The dessert menu includes light, traditional tiramisu and pannacotta, as well as warm, delectable chocolate soufflé.
Antonio Voci was born in Italy, in the town of Acqui Terme. For many years he managed his own restaurant and worked in various Italian cities, including Verona and Genoa, as well as in Osaka, Japan.

Antonio has honed his skills to such an extent that he was invited to manage the restaurant of the main press centre for the 2008 Olympic Games in Beijing, which hosted leading international media as well as athletes and the political leaders of countries participating in the most important sporting event of 2008.

Antonio was drawn to St. Petersburg by a desire to develop professionally and his love of travel. During his time working on Princess Cruises ships, he travelled to many countries and visited many cities. Antonio has been impressed by St. Petersburg as a cultural European city whose architecture reminds him of his native Italy. He was pleasantly surprised by how friendly people have been to him, and hopes to achieve success in his new, interesting position at Borsalino.

Of his plans to develop Borsalino restaurant, Antonio says, “I like the restaurant a lot, but I would like to give it a truly Italian ambience – friendly warmth, a social and cosy atmosphere. The new menu embodies the concept of haute cuisine, since all dishes are prepared using the finest quality, handmade ingredients, including pasta. We hope that our carefully crafted dishes will satisfy our discerning guests.”

As always, live jazz music will entertain guests at Borsalino. Pierre Eugene, one of the finest jazz vocalists currently performing in St. Petersburg, will play for guests every evening at 8 p.m.
